The Wikipedia article on basically has all the info. 'Knecht' means servant, 'land' means land. It's used in 'Landsknecht' to indicate someone from the low lands as opposed to someone from the Alps region (Swiss mercenaries were elite troops). Your explanation of the pronunciation is good, although it's hard to approximate the German 'ch' sound using English. For those of you who know Japanese, the consonant part of ひ and ふ comes close (but further back towards the throat).

I'm pretty sure -LANDSHARK BANNED- was an snl skit. Which means calling a landsknecht a skit is doing them an disservice. Those mercenaries prided themselves on their prowess, so I'm pretty sure they would appreciate that.

They just don't seem to have actually read the word... I mean, when I first saw it I thought "What the--?" but when I read it properly I quickly realised it was just the words "Lands" and "Knecht" and that "Knecht" was a slightly changed spelling of "Knight". You can even remember it as "Lance Knight", since that's one of the meanings it took on after a while, if I correctly recall what I read in that Wikipedia article yesterday.
