I'm doing something of a marathon.
I don't want to get spirit tracks until my finals are over. I shouldn't be playing a NEW game yet. That said, I DO have some time on my hands, and I've been using it to breeze through The Wind Waker again. I love that game.
After that, I'll play Phantom Hourglass. I played most of it but never finished it. THEN I'll play Spirit Tracks. I know it's not the same Link/Zelda, but it's still a direct sequel and I like the continuity.
Couldn't be happier with TWW. I get a huge grin on my face every time I play it. It doesn't measure up to the epicness, joy, adventure, and fun of my favorite entry in the series (and my favorite game), Ocarina of Time, but it comes damn close.

I don't find exploring fun at all. I just don't. Going from point A to point B (not in the sense of "from one objective to the next" but literally just going from one location to another) is always boring to me. In WW, sailing was boring; it's a boring trek and the "side stuff" to do on the way isn't exciting / unnecessary / tedious as well. I prefer doing something, not traveling.
I enjoy everything about Zelda games (well, sans the fact a blind person can beat them) except traveling.
And, for the record, I did beat WW and get everything in it for full completion. And plenty of other open-world exploration games (Morrowind, Oblivion, Fallout 3, etc.); going from Point A to Point B is just boring, however. I don't mind so much if going from Point A to Point B has a lot of things to do (Borderlands, for example, has a lot of combat between locations) but the act of travel itself is what is boring and irks me.
And, yes, SotC between boss fights is annoying.
And it's not like I'll quit playing a game due to boring travel being necessary but it doesn't stop me from being sad that I have to do it.
I liked SotC. I still like SotC. That doesn't mean I can't say the worst part of the game, to me, was the "go find the boss fight"; I don't really care for sitting around taking in the scenery. That just does not interest me. Yes, I can stop an go "oh, that looks nice" but that's really it; I move on. I don't have some thrill in exploration so, yes, it definitely comes down to a different philosophy. Blame my history of MMOs and end-game raiding where my enjoyment stemmed not from "ooh, new place!" but to, "ooh, new hard encounter time to figure this out!"
Or, really, blame my history of competitive gaming I guess where harder opponents = more thrill = more fun.
As for "combat", it depends on how it is done; I enjoy the combat in Borderlands so stopping to do that combat is fun. Plus, EXP and drops. At the same time, combat can be tedious and it becomes the chore in trying to get from one location to another instead of the actual travel. It's not like I enjoy the prospect of traveling in a Zelda game thanks to random enemies along the way to kill; I usually just skip through that.
And, seriously, how the hell is ALttP not easy? The first two Zelda games maybe not as much but still, they're not that difficult of games. But I do think we've come to the conclusion I don't find much of anything challenging and my view on "difficult" is completely different from others here. Also, I never really meant that easy means not fun; just that I'd like to be challenged. Having to think things through or put actual effort into winning just makes the whole thing a better experience for me.
For instance, I wouldn't call SotC a hard game by any stretch of the imagination but the whole scaling the boss and finding the weakpoints was enjoyable. The fights themselves are simple but figuring the fights out was fun.
