nuzlocking EO doesn't sound hard >> After the first few floors, you really shouldn't have random deaths anymore. There's very few things in the game that will randomly kill you.

Most my EO playthroughs are low death counts anyway (<5) so with some more paying attention, I don't see why I couldn't do a 0 run.
