I've started making Southwest Chicken Stew
I was calling it chicken chili, but my husband objected, so I changed the name and now he's happy.
It uses a chicken chili kit and chicken, obviously, but then after it's done I add a can of kidney beans, a can of chili beans, and a can of corn, plus a little salsa. I serve it over hot cooked rice.

Easter weekend; no better time to eat chocolate eggs, right? However, lots of chocolate and little fiber → relative sugar high → sugar low → drowsiness, so I'm going to get me some black tea to stay awake. Not that taking a nap would be so bad. This weekend is three days long after all. I already stayed up until 04:00 last night though, and I don't want to mess up my biorhythm too much. Kanpai!

Easter weekend ... if I were in OK right now at my reunion, I'd have feasted on fresh-caught fish fry last night, woken up to whatever the hell I wanted for breakfast, including a fistful of cookies, dessert bars, pies and cakes. Sandwich meat lunches and whatever for Saturday lunch, Chalupas for Saturday dinner, and then... and then... the huge Easter Sunday buffet with everyone bringing out their best pot-luck foods... BBQ brisket, roast chicken, biscuits and gravy, deviled eggs, okra salad, cornbread....

For dinner today I made sweet and spicy ginger pork with spinach, carrots, broccoli, green onion, and corn all sauteed with garlic. I added the corn because my roommate really likes it. I toasted some wasabi peanuts and almonds then tossed them with the veggies and pork. Reducing the spicy ginger marinade yielded a tasty sauce. I served it with brown rice.
I admit I am kinda impressed with myself because this dish ended up with a flavor that I identify as "chinese food," when my asian-style dishes don't always have that.

Ate a $100 meal with my husband while we were in Williamsburg. We made reservations at the fancy tavern.
Unfortunately, we were in the same dining room as two families with small, ill-behaved children. A bit irksome that we were trying to have a very expensive romantic dinner and there were children making noise. I couldn't hear the balladeers playing/singing in the next room.
