Re: What do you eat?

I'm about a hundred miles away from Houston :x

I need to restock almond flour (...or maybe make my own, hm...) but I do have an idea for one (2c flour, 2 eggs, 1c hard cheese + seasonings) for the dough itself. Think I'll do that for the weekend since I need to do shopping when my fish runs out. Alternatively, a cauliflower base but I'm not that huge into cauliflower.

I really enjoy cooking though so it's not a big deal to take the effort.

As an aside, dinner tonight is some asparagus and mahi mahi with a brown butter balsamic vinaigrette. Oh and an obligatory slice of bacon. Feel like I should be on topic.

the recipe that the pizza I had was based on. It does use brown rice flour and I know you said you're avoiding grains altogether (as I do), so I'm fairly certain you can substitute the brown rice flour for something else. I'm not sure what, because I wasn't the one who made the pizza and the person who did can't remember how he modified the recipe. You can also substitute turbinado sugar for the brown sugar in the recipe, if that's a concern.

EDIT:

While we're talking about baking, here's my favorite gluten-free bread recipe taken from a website and tweaked to my specifications:

We have a bread machine here so I can't vouch for the conventional oven method with this particular recipe, but the stuff I get from this recipe is just SO delicious. Fantastic for the very occasional piece of toast or a sandwich, as the name implies. Also, last time I made it I added a bit of vanilla--awesome touch to round out the flavors in the flour.

I know of Elana's Pantry and that recipe looks ... complex, but that result looks amazing. Flour substitutions are always iffy since they vary so much in a huge manner, though; gonna have to toy with that one.

That said, it'll definitely need me to buy a lot of flours (only keep almond and coconut on-hand) before I can give it a good go. I don't do too much baking (surprisingly, I don't really ... miss most baked goods) so I haven't kept a stock of flours.

Edit: Or yeast. Damn you for making me need to go and fill up my pantry more~

Both my parents are bakers. One of those things I know how to do but don't necessarily enjoy much of anymore :x

Edit: That aside, I'm pretty sure yeast is one of those very non-primal ingredients so I'll have to save trying either of those for one of those "bleh" days.

Aaaah, that's true! : O Forgot about that bit. Hrmm. Most of the baking I do on even a semi-regular basis (I really do try not to do it very often, 'cause, y'know, carbs and stuff) involves nut butter of some kind as the base so it's flourless anyway.

Well, let me know how it turns out if you do. : D

Hmm, my cooking mood may have just been revived... *wanders into the kitchen*

Dear diary. Today I ate a sandwich.

Edit: Err. I didn't say anything. Being made to eat pizza in the middle of the night. Feeling a bit sick.

Is ...

Is that better?

Edit: Yeah, no. Don't think so. I'll cut the pizza up, and hide the pieces in old chips-bags, and maybe have solid breakfast tomorrow instead.

Made a cajun-inspired pasta dish tonight. Carb heavy like whoa (full thing would be at the ~400 mark but that's like 8 servings) but, damn it, it was delicious. Put me mostly out of keto (derp) but oh well. Succulent savoriness must be done occasionally for that is life.

And because otherwise the chicken breasts would've probably gone bad and my roommate had cracked open a new bottle of wine that forms the base of the sauce to the dish.

That and we had like 6 people eating so...yeah.

Boy, that was wordy. Tomorrow, fish (mahi mahi because it's DOLPHINfish) with a hollandaise that I better not mess up (so simple ... yet so easy to screw up) with a bed of asparagus. I have two filets left so I'll probably just do it twice tomorrow for lunch and dinner.

Sunday will be pizza experimentation. I bought some cauliflower today and want to try a cauliflower base. Sorry Trifkin, your delicious recipes will have to wait!

Good news is that I didn't fuck up the hollandaise. I should just buy a real double boiler. Or, now that I type this, just use my smallest pot with my large glass bowl. Fuck I'm dumb.

Or just do it the easy way and make it in a blender.

It's so good though, I may end up making this way too often anytime I prepare fish. 1 egg per 2tbsp of butter should work in making a small batch, I suppose.

Will definitely spike my Omega-3 and CLA intake ... not that there's anything wrong with that.

Edit: I probably should have taken a picture. Hm.

Today I was reminded of the fact that I prefer plain rice over 90% of the foods you could ever offer me.

Even over the homemade lasagna I had earlier.

Well, I am a boring person, so a steady diet of plain rice and water is needed to maintain my levels of boringness.
