Mercury, yes.
Cholesterol... what? I've never heard this before. I've only ever heard that fish contain omega-6 fatty acid, which lowers cholesterol. Shellfish have more cholesterol than, er, fleshy-fish (salmon, tuna, mahi-mahi, tilapia, etc) but... still. Compared to other types of meat, fish are a cholesterol lowering food.
As for frying eggs in oil -- ew? I use a non-stick pan with no added grease, not even PAM. But I scramble mine, so maybe that changes things?
About mercury: Max is probably better being near a coast. I'm in a land-locked state, so the only fish I trust is catfish.
Oh, and Chinese food:
Most of what is found on a typical chinese food place in America is NOT actual chinese food. It's like saying Texmex is what you'll find in Spain, or that Pizza Hut is anything like traditional italian food.
And ditch those microwave hashbrowns. They've been parfried at the factory anyway. Try some toasted whole-wheat bread -- Earthgrains makes a fantastic thin-sliced 9-grain wheat that doesn't have any high-fructose corn syrup. I spent like 15 minutes reading ingredients and they were the only bread at the store that didn't have that shit in it.
Smart Balance makes a great Omega-6 peanut butter, by the way! You can get Omega-6 eggs, too, and Smart Balance now has an Omega-6 butter blend that is way way way better than margarine (trans fat = evil!!) or butter.

100g shrimp cooked in moist heat, 195mg cholesterol. That's quite a lot.
I'm not saying that it's unhealthy per se, just that you shouldn't be trying to eat a ton of shrimp or crab or anything under the pretense that it will magically lower cholesterol or make you lose weight. Exercise and moderation in your diet are still essential. Both. Not just one or the other. And if you can put forth a dedicated effort to both, you will see positive results over time.
As for fish -- fresh fish are generally pretty healthy unless you're dousing them in butter and frying them.

It's why I disagree with diets. You can't take yourself off of this or that food and expect to magically lose weight - 'cause even if you do, you gain it back once you are off the diet. I want to learn how to eat healthy and continue the practice throughout my life.

I figured you knew better than that as well.
Improving the body takes tremendous work involving the heart, mind and body. Though the ironic part is it's harder to lose weight when you're not happy, but those who are not happy are usually the ones with weight problems. That's why I believe that it's never too hard and never too late. ^-^ Not aimed at anyone.

-_- you don't wanna know what I ate today. A failure in appetite totally killed me. I wasn't that hungry and the foods that I would try to pull out just looked so SICKENING. So, I gave in, though with as little of an appetite as I had I think I still stayed under my 2000 calories. Prolly not. I had two pieces of fried chicken (the only thing on my plate) with a little bit of bbq to dunk it in. I still ate the skins. I was so hungry and nothing else looked good. -_-; I shoulda given it to Blou, but I just wanted to get some food into me.
<_< I hope this was just a today thing.
[spoiler]Okay, here's what I had to eat, and you can insult me - the embarrassment will prolly do me some good.
(11:00am)I had a can of Boyarde's Lasanga <-- a food that I had, until today, successfully stricken from my diet - one of my favorite foods. >_<
(5pm)Then the two fried pieces of chicken.
(12am)And then while we were playing Halo, six fig newtons.
And with each of those meals, a glass of milk.
And water any other time during the day.
I dunno what to call this day. It doesn't seem like much, but I dunno. -_-; But, I was so hungry

It feels like all I did at Easter was eat!!
My mother made a Sopapillas (sp?) cheesecake dessert that was simply amazing. I have to get the recipe from her soon and make it myself.
Our Easter meal is a giant buffet:

This year's spread included fried chicken, brisket, ham, roast chicken, meat loaf, poke salad, okra salad, green bean casserole, bacon/potato fry, two kinds of macaroni and cheese, homemade bread, etc etc... and then the dessert table.
24 hours a day, for all three days, the dessert nook is overflowing with a variety of homemade pies, cobblers, cookies, brownies and such.
Here is me trying to decide what to get:

There is always plenty to eat anytime my family gets together.
