Mercury, yes.
Cholesterol... what? I've never heard this before. I've only ever heard that fish contain omega-6 fatty acid, which lowers cholesterol. Shellfish have more cholesterol than, er, fleshy-fish (salmon, tuna, mahi-mahi, tilapia, etc) but... still. Compared to other types of meat, fish are a cholesterol lowering food.
As for frying eggs in oil -- ew? I use a non-stick pan with no added grease, not even PAM. But I scramble mine, so maybe that changes things?
About mercury: Max is probably better being near a coast. I'm in a land-locked state, so the only fish I trust is catfish.
Oh, and Chinese food:
Most of what is found on a typical chinese food place in America is NOT actual chinese food. It's like saying Texmex is what you'll find in Spain, or that Pizza Hut is anything like traditional italian food.
And ditch those microwave hashbrowns. They've been parfried at the factory anyway. Try some toasted whole-wheat bread -- Earthgrains makes a fantastic thin-sliced 9-grain wheat that doesn't have any high-fructose corn syrup. I spent like 15 minutes reading ingredients and they were the only bread at the store that didn't have that shit in it.
Smart Balance makes a great Omega-6 peanut butter, by the way! You can get Omega-6 eggs, too, and Smart Balance now has an Omega-6 butter blend that is way way way better than margarine (trans fat = evil!!) or butter.
