And what exactly do you mean they're running some "shitty demo-operating system" and why does that mean they can get away with low RAM amounts? I understand not getting, say, 4 GB of RAM in there without a 64-bit OS but ...

I was talking to the "geek squad" guy at Future Shop, (A name which isn't really helping the stereotype of: "you liek geeky things, fix my computer"), and he said they only have one gig to start and the maximum they could put in was two gigs. Even with my incredibly limited knowledge on computers, that seemed really low, and since an operating system takes up around one-ish (?) I asked how that was possible. He said they used some demo version of windows 7 that took up no room (also see: does nothing)

Just to note, the Geek Squad things (we have one in the states with Best Buy) don't actually really require much computer knowledge. Knowing the workings of a computer is far different than troubleshooting basic things (from a guide, at that) and fixing hardware. The only Windows 7 demo I can think of are the Trial builds which are basically limited full (Enterprise, actually) releases. They actually require the same space and requirements as a regular Windows 7 install.
Off-hand, Windows 7 uses ~220 MB by itself so, realistically, 1 GB isn't terrible. Since 1 GB in a laptop is basically unheard of though, 2 GB is fine. 4 GB is basically gaming territory and 8 GB+ is wasted unless you're doing heavy image/video editing or just never close programs out.
I think the bigger wtf is the 1 GB RAM "standard" you're finding on notebooks.

Case: BitFenix Shinobi Window
PSU: Corsair 750W
Motherboard: Asus P8P67 Pro Rev 3.0
CPU: Intel Core i5-2500K
GPU: Radeon HD 6950 2 GB
RAM: 4 GB (2x 2GB) DDR3 1600
HDD: 1x 64 GB SATA III SSD, 1x 2 TB HDD, 1x 1 TB HDD, 1x 750 GB HDD, maybe another 2 TB if I feel like it.
CPU Cooler: Cooler Master Hyper 212
No idea on monitor yet since my current setup will probably just stick with the 52" TV for now. Probably buy a 27"-ish monitor for when I move this to the bedroom instead of the living room. Looking like this build is putting me around the $1200 mark pre-monitor and probably $1500-1600 after the monitor. Though, to be fair, closer to the $1000 mark if not for the $150 SSD there and I could probably skimp on the PSU (system needs maybe 500W so a 550-600 is fine) but ... eh.

Yeah, wasn't really a sale. Just limited stock of a $16 shipped item; Amazon's price is $16.29 and it's been under $20 for awhile I believe.
In other news, L.A. Noire from Buy.com is $45. Only relevant because that's the pre-order price, not a BOMBA sale. Amazon is $60 with $10 credit; typical pre-order thing from them. CAG, Slickdeals, etc. are all trying to get Amazon to price-match it (at least bump up to a $15 credit) so might be worth keeping an eye on that if you're interested.
Portal 2 (and Mortal Kombat 9) price dropped to $35 ($40 for MK9) already too for those interested. Probably some other deals about but those the only two I recall off-hand.
Oh, for the Dragon Quest fans, DQ5 went back in stock on Amazon awhile ago. So it's not stupid hard to get a copy of it if you need it for your collection or something.
