We had French, Spanish, and Latin at my high school.
The an awesome Chinese teacher showed up after I had already taken the maximum number of foreign language courses (senior year) :V

my high school was Spanish, French, and German. The idea of Latin being taught at a high school (it's even required in some places) boggles me.
also even though I live near Mexico, I honestly would probably use Japanese or Korean more. Or Vietnamese, but it looks impossible.

I took Japanese as an optional requirement for one of my University degrees, and it was pretty easy to learn, even without having learned any of it beforehand, and me being generally terrible at learning second languages.
I really like how Hiragana is completely phonetic, without any exceptions whatsoever. I can really sympathize with foreigners trying to learn english now, because how much of a mess it is becomes even more apparent after you've formally learned another language like Japanese that actually makes sense.

Japanese intrigues me, but if I had to choose, I'd probably go with German in order to appeal to my order-craving mind.
