My mother has accused me of planning a "mockery" of a wedding and insinuated terrible things about my fiance, who when I was like "How dare you; you've known him for 4 years!" she was like "WELL MAYBE I DONT KNOW HIM AT ALL"

Don't invite her. If you are financing your wedding yourself, then she has no rights to tell you anything about the way you want your wedding. If you want to do your vows whilst sky diving naked, then she should respect your decision for a strange wedding.

Just treat her like a customer, thank her for her comments, but do what you want anyway. Don't get swayed by her advise, too many people loose out on what they want because of interfering family members.
