It's a short recipe so not a big deal to type it up. Hell, I typed up that cajun pasta one earlier!
Cauliflower pizza:
1 cup cooked riced cauliflower
1 cup shredded cheese (I tried both cheddar and mozzarella and they work fine; just use bigger shreds not super fine or else the resulting dough is smaller)
1 large egg
Various seasonings (I did fennel, oregano, herbs de provence, basil, light pepper/salt; just use your judgment for how much to use. I did 1tsp/2tsp/1tsp/1tsp/pinches)
Sauce, toppings, and cheese of your choice.
Combine in bowl and transfer to a greased/no stick pan (I used parchment paper, personally, since my first batch stuck even with it sprayed down). Just press the "dough" down to get it to that pizza shape. Once it's spread out, I'd fold in the last half inch or so of the edge so it forms a "crust" on the outer edge.
Bake for ~12-13 minutes. While it's baking, cook any of the toppings that need to be cooked (or, if they take longer than ~15 minutes, cook them earlier). Keep an eye on it as the edges will probably crisp far earlier than the center, hence why I suggest folding those in to be slightly thicker than the rest of the pizza (and, well, to give you a crust to hold onto!)
Remove pan when it looks done and set the oven to broil. Apply your sauce, toppings, and cheese and return the pan to the oven. You're just doing this to melt the cheese so it's only going to be in there for a 2-3 minutes tops.
When the cheese is melted, pull it from the oven and enjoy.
Both pizzas I did were basically sauceless; just applied a bit of olive oil to the pizza and did my toppings and cheese (chicken, tomatoes, and basil with mozzarella~).
Pizza is a bit thin but it otherwise feels (and more importantly, tastes!) like pizza. You can make it thicker by just making a smaller pizza (think mine measured close to ~10"?) but you'd probably have to adjust the cooking time. Not positive on this part.
Note: If you use pepperoni, you may want to microwave them wrapped in some paper towels so you can remove the grease from them before putting them on the pizza. Otherwise, broiling them will have the grease drip through the pizza. As a plus, microwaving like this won't fuck with the pepperoni flavor much.
And the beauty of it? I'm pretty sure that the pizza itself (pre-toppings) was ~1 carb per slice. Hah!

Tonight I am making enchiladas because I got a whole chicken on sale for $5 yesterday. I stuck it in the slow cooker this morning, so it'll be all nice and roasted when I get home.
I dusted it with garlic powder, paprika, cumin, cayenne, coriander, and pepper, and then I draped whole cilantro over the chicken as well. Yum.
Tomorrow I am making Red Curry for D&D.

chicken thighs were on sale today. I bought 4 packages.
That means menu planning this week looks like this:
- Asian Stir-fry (with Chicken, rather than pork as per usual)
sauteed in sesame seed oil with bell pepper and mushroom served with a sauce made from soy, hoisin, sherry, brown sugar, and a dash of spices over rice
- Chicken Tikka Masala
chicken with mushroom and bell pepper, simmered in a spicy tomato and cream sauce, served over rice
- Southwestern Chicken ???
chicken "chili" made thick with red beans and corn served over rice. My husband calls it a stew, I call it chili, it's delicious.
- Thai Red Curry
I'll need to buy more bell pepper and mushroom... Ha.
Fortunately I just bought a 15lb bag of rice last time I was at the asian food mart. <3
Yes, I do make a lot of meals that are essentially chicken + vegetables + sauce = over rice.
That means menu planning this week looks like this:
